We’re getting close to the Montana Permaculture Design Practicum, and we’re excited to share the Spring Menu that will keep us nourished, energized, and inspired during our time together at Orion Farmstead.
Here’s what you’ll be enjoying:
Hearty Breakfasts
- Bison Breakfast Hash – with wild greens, roasted potatoes, and fresh herbs
- Bacon & Herb Scramble – featuring ground elk, goat cheese, and seasonal greens
Fresh, Lite Lunches
- Spring Veggie & Lamb Wraps – build-your-own with shaved carrots, cucumbers, hummus, and arugula
Warming Dinners
- Bison Chili – slow-simmered with seasonal veggies and warming spices
- Seared Lamb with Wild Rice – paired with fennel, spring onions, and herb-tossed garden vegetables
We’ve designed this menu to reflect our shared values: local sourcing, wild-foraged greens (nettle and dandelion greens), minimal waste, and community-style cooking. Every dish is crafted by Logan Pettyjohn, using a simple setup that allows us to focus on connection and learning—without sacrificing flavor.
